Thai for Dinner

A couple weeks ago a friend treated me to lunch at a local Thai restaurant. I ordered a dish that consisted of rice with pineapple, cashews, tomatoes, onions, celery, raisins, scrambled egg, and other veggies. It was really tasty! So today I decided to recreate it here at the house. Yum!!
