Last night I used three of them to make yummy eggplant parmesan!! :) It was very good and fairly simple to make. Peel and slice the eggplant. Dip slices in egg, then in flour. Fry in olive oil until golden brown. Pour a jar of your favorite spaghetti sauce in a baking dish. Layer the fried eggplant on top and sprinkle with cheese. Bake at 350* for 20 minutes. All done!! You can serve it with pasta or eat it as is with leftover cheese pizza (that's what we did). And a bonus, the leftovers make for a perfect lunch.
As I was picking arugula for our big salad dinner tonight, I noticed there are lots more blooms and baby eggplants just a growing. I'm so excited that they decided to spring back from the dead. Ha!
