Strawberry Pie

This made for a yummy treat after our three mile run (slash walk for me) tonight. I used this recipe as a guide. Here it is after my tweeks. :)

1 baked and cooled pie crust
1 1/2 cups sugar
6 Tbsp corn starch
1 cup water
2 cups fresh strawberries, mashed
4oz cream cheese, softened

Prepare your pie crust, bake, and let it cool.
Mash your strawberries (I put mine in the blender).
In a medium sauce pan combine the sugar and corn starch. Stir in the water and berries.
Over medium high heat, cook stirring all the while until the mixture thickens and comes to a boil. Reduce heat so you don't get splattered and keep stirring for one minute. Remove from heat and cool.
While the jam you made cools, stir the cream cheese until soft, and spread it onto the bottom of the cooled pie crust.
Pour the cooled jam over the cream cheese. Top with a few sliced strawberries and let it chill in the fridge for a few hours.
