Evening Snack for Two

Mini Pumpkin Breads served with Organic Egg Nog. Yum.


Pumpkin Bread
5 eggs
1 1/4 cup butter
15 oz pumpkin
2 mashed bananas
2 cups flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
In a large mixing bowl, beat the eggs. Add butter, pumpkin, and banana; beat until smooth. Combine dry ingredients; gradually beat into pumpkin mixture. Pour batter into two greased loaf pans (or make mini ones). Bake at 325* for 40-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
