The hot light...


Early last week, Tony had an assignment for his Marketing class in which he had to discuss Dunkin Donuts. He studied out their website and watched several of their commercials. Then last night, we watched "Undercover Boss" with my parents; at one point, the CEO of 7Eleven went undercover in their large bakery in which they make all their own pastries, fresh every day. We decided it was time to satisfy our week-long craving for some hot glazed covered doughnuts!! So tonight after dinner, Tony and I packed up the laptop and one of his school books and went to our local Krispy Kreme. We sat inside for nearly 3 hours snacking on yummy doughnuts, sipping on coffee, and collecting information for one of Tony's papers that are due this week. Sweet time of togetherness. Pun intended!!

It's a process...

That's what Tony just said regarding his Philosophy paper.
Numerous hours writing.
Finally the wording is just right.
Excitement enters in because it's almost finished,
which means it's almost bed time.
But wait, not yet.
Add another hour to proof read, set it up in APA formatting, make a title page, etc.
Another whole hour.
Oh the anticipation to shut off the lights and crawl in the bed.
But not just yet.
Double check everything.
Add some more time to e-mail it to the teacher,
and submit to turnitin.com,
and upload it to google.docs.
I agree, a process it is.
But very rewarding when it's all said and done.

1:15am - the process is complete.
Now it's time to drink some sleeptime tea,
to hopefully counteract the coffee we had earlier.

A Good Night

Marketing, Philosophy, and Integrated Art has been keeping us up well past midnight on a daily basis. We know it is most healthy to get at least 8 hours of sleep... but that seems impossible during this season of our life. He has three weeks left of these classes, then he's dropping back down to 2 classes. It will be nice! There we are on one of those late, late nights. :)


On that same night, we recieved 7 inches of fluffy snow and enjoyed midnight snow cream.



Last night we took a much needed break from all things "work related" -- It was a good, good night!! Absolutely amazing time spent with my bestest friend ~ dinner at Murphy's, coffee at Starbucks, people watching at the mall, very tasty wine, a movie with popcorn and intermissions of dancing and fresh from the oven chocolate chip cookies. Lovely time of togetherness and tears of pure joy and gratefulness for the grace God has extended to us. Magical!!

Amazing Lasagna Soup

Yesterday I decided to make a veggie lasagna for dinner - without the noodles. Yes, you heard me right. Tony & I had lots of carbs over the weekend, so I was trying to make a low carb lasagna. I know you probably think I'm completely crazy, and that's perfectly okay because it turned out awesome. And I will definitely make it again. I'm actually enjoying some leftovers right now. :) Since I didn't include the noodles, the lasagna ended up being somewhat juicy... kind of like a thick soup texture. So we ate it out of a bowl and learned that a spoon worked better than a fork. Here's how I made...

Amazing Lasagna Soup
16oz ricotta cheese
2 cups mozzerella cheese, shredded
1/2 cup parmesan cheese
2 eggs
12 oz fresh spinach, slightly steamed
Italian seasonings
1 jar of spaghetti sauce
Black olives
Mushrooms, sliced
8oz provolone cheese

Preheat the oven to 400*F. Combine cottage cheese, mozzerella, parmesan, eggs, spinach, and seasonings. Stir until ingredients are well incorporated. Layer 1 cup of the sauce, the cottage cheese mixture, sliced olives, and mushrooms in a 13x9inch baking dish. Pour remaining sauce over it and top it with provolone cheese. Cover with tinfoil and bake for 35 minutes. Let stand for 10 minutes before serving. Enjoy!! :)

On this cold, rainy day...

Last night, right before I crawled in bed, I made
myself a little list of things to do today. Things are
gradually being crossed off and it is such a good
feeling. Laundry (check) Read (check) Crochet
(check) while listening to Ecclesiastes sermon by
Driscoll (check) Start garden plan (check)...
This year will be my second attempt at gardening. I learned a lot
from mistakes I made last year... and I know that it will take time,
probably years, to become a true gardner. But I like trying and love
the idea of growing some of our own, fresh from the garden food.
This year I am striving to have an abundance of beautiful tomatoes,
cucumbers, arugula, snow peas, zuchinni, cilantro, basil, and lots 
of pretty flowers. A girl can dream, right? I spent some time flipping
through the seed catalog and taking note of the seeds I harvested
from last years garden. I'm like a child looking through a Christmas
catalog. I "want" everything. Haha. But I am determined to keep
things simple and to focus on just a few basic items. And as my
gardening skills grow (Lord willing), so will the variety of my garden.
