Gnocchi's for the Neighborhood

While flipping through an old Martha Stewart magazine I came across a recipe for Baked Gnocchi with Cheese. It sounded so yummy and I had been talking about making it for a couple weeks. For anyone that does not know, a Gnocchi is a small dumpling type noodle (like pictured to the right) with a base of potato or ricotta cheese. My Mimi (grandma) made the 'mistake' of making gnocchis one year - she served it with sauce and italian sausage. It was so good!! And every time we visited her we would ask her to make gnocchis ... she said they took a long time to make and instead would make her yummy lasagna for us. Ha! Us girls have made gnocchi's a few times since, the last time being October of 2007 -> there we are rolling out each individual dumpling. So when I saw this yummy version of it I knew it had to be tried. I recruited my sister on her day off work {yesterday} to come over and help make lots of gnochhi - that way there would be plenty for my family and Tony's parents. We like to share. :) Everything was going smoothly and we were making pretty good timing. We peeled, boiled, and mashed 5 lbs of potatoes and added to that six eggs, six cups of flour, and six tablespoons of salt. We started mixing it all together by hand to be sure everything was well incorporated. Then I tasted the dough. I tasted it again. I told Brittany to taste the dough and asked if she thought it tasted salty. Her face said it all. I reread the recipe and realized that I was only supposed to add about 8 teaspoons of salt - not 6 Tablespoons. GASP! First we tried adding a little more flour. That didn't work. Maybe adding a little milk. But we didn't want to mess up the dough. We called mom to tell her of our mishap and ask for any ideas. She laughed (in a nice way of course). The dough was very very salty. And we figured that the only way to fix it is to double the recipe again and add no more salt. So as soon as my sweet husband got off work I sent him on a mission to buy us another 5 lbs of potatoes. He got home. We peeled. We boiled. We prayed! We added the flour and eggs. No more salt. We mixed. mixed. mixed. And mixed some more. It was a massive pile of dough! The pictures do not do justice. I think enough to feed our neighborhood - hence the title of this post. We hesitantly tasted the dough again. {insert big sigh of relief!} It was no longer salty. Praise the Lord! Brittany sliced and shaped the gnocchi's while I boiled them and prepared the mozzerella cheese sauce. We took turns straining them out of the water as they rose to the top. Mom joined us a little while later to help finish and clean the counter. We made a fairly large mess. I think I swept the floor at least five times during the process. And washed my large pot four times. But after 10 lbs of potatoes, a dozen eggs, 16 cups of flour, 6 tablespoons of salt and some yummy cheese sauce we ended up reaching our goal - baked gnocchi with cheese. Which admist all the cooking we did not get a picture of the final product. Oh well. It was good. Very good actually. We didn't use nearly half the dough. So I have divided the rest up into four ziploc bags and they have made themselves at home in our freezer. The next time we have a craving for gnocchi's at least it won't take no where near as long. :)

It's just the beginning ...

Here is the start of our little garden. After eating some
homemade biscuits and gravy, my sweet husband went to
work on building our garden box. Of course I stood close by
to watch and help. ;) Monday night we placed the order for
some of our seeds and are looking forward to getting those
planted in little pots very shortly. Grow garden, grow!!

This is my first completed sewing projectusing a pattern -
a froggy apron. This fabric was originally purchased
by Tony's mom over twenty years ago. She was going
to turn it into little overalls for Tony, but never
got around to it. So the fabric was neatly folded
and safely stored for twenty-plus years.
The frogs that are centered on the pockets remind her
of little Tony - he was such a happy child and liked
being silly. Always had a big smile on his face. :)
Thats my hubby!! And I am so grateful to God for him!!

but I also get to hear all kinds of cute stories about Tony. ;)

Domesticity

Last night, Tony took a break from his schoolwork to share a bowl of buttery popcorn with me. :) We sat there enjoying each others company and listening to a message by Pastor John Otis. Lovely time of togetherness. Then it was back to schoolwork. I practiced my sewing skills by making another pillowcase; not perfect, but I can see improvement. Yay! I think my next lesson will be tomorrow. Maybe one day I'll be able to sew some of my own clothes. That would be nice because I tend to be picky and have such a hard time finding clothes that I like. I guess that is my goal. I love learning about all these domestic skills. Along those lines, we are wanting to start a little garden this year - it would be our first. So, I've spent most of the morning researching. I've come across some really neat concepts and look forward to sharing all my research with Tony!! The options seem endless, but I trust that God will guide us and turn my "brown" thumb "GREEN." ;)

The Gospel Comes to Life

This past weekend we attended the 20/20 Collegiate Conference at Southeastern Baptist Theological Seminary. Joined by our dear friends, Kevin & Sherri, we heard 2 messages by Mark Driscoll, a message each by CJ Mahaney, Bill Brown, and Danny Aiken - all within a 22 hour period. It was convicting, encouraging, and refreshing. Nearly 1500 people attended the conference - Daniel Renstrom led us all in singing many praises to our Lord! What a chorus! It was wonderful being surrounded by such a nice group of people; surrounded for the most part by fellow Christians. Everywhere we went we could overhear people talking about our wonderful Savior and even the topic of infant baptism came up while the guys were in the bathroom. We found this to be pretty funny!! And you look out at the vast sea of people in the audience and are awed at the fact that our God graciously saved many of these people!! Our God ransoms the wicked!!!! Amen!

Some quick notes: We are called to love our cities and nations; to love our enemies because God loves his enemies (I used to be one); worship God through our vocation; suffer for the faith. We are to be missionaries and disciples in our culture; a city within a city. As Christians there are things we are called to receive, reject, and redeem for HIS glory. We are to be totally amazed at the reading of Scripture - it is more exciting and more profound than the Super Bowl! We are to proclaim the gospel and let it affect us as we share it with others. May there be tears in our eyes and great joy in our hearts as we recount God's amazing grace to sinners. Penetrate the culture with the gospel; leave a legacy; think generationally. We are called to be the most loving, kind, and generous people!!! We are to worship our mighty Creator in all arenas of our life!
