We're in the Army

Big news. My mom & I joined the army! Yep ... you heard me right. We are now part of "the FEW, the CHEAP, and the PROUD" in Ollie's Army. Ollie's Bargain Outlet had their grand opening yesterday and it was so exciting walking through for the first time with my mommy, looking at all the great deals. :) Brittany and Anisha hung out with us for a little while too. It was fun being silly together.

Vacation

Tony officially finished his second semester of school on Saturday. :) We were both very excited about that! Today he starts semester three, so we had one day of "vacation." Haha.

Saturday evening we met up with a few other Christians at the State Fair to proclaim the gospel. There were a few thousand gospel tracts distributed as we stood near one of the fair entrances. There was a young guy that came and stood near Tony & I. Tony handed him a gospel tract and the guy stood there and stared at it for a little while. I then asked him if he had a Christian background. He said that he was raised Christian, but recently converted to Islam. We spoke of sin, righteousness, judgment, and how JESUS CHRIST is the way, the truth, and the life. Jesus is the only way that a sinner can be reconciled to God. He thanked me for the conversation and walked away. May God do a mighty work in this young man's heart.
Sunday afternoon (our day of vacation :) we went to the Cliffs of the Neuse for a couple hours... enjoying the warm weather and the time spent with each other.

That evening, my family came over to help celebrate our neighbor's birthday. The main course was Fettucine Alfredo - which was very very tasty . . . but definately not good for you. :) The recipe I used called for lots of butter, lots of cream cheese, lots of half and half, and lots of parmesan/mozzerella cheese. Hey, at least I used the half and half instead of the Heavy Cream. That makes it a little healthier, right? ;)

Lime Bars


**Lime Bars**

2 1/2 cups flour, divided
1/2 cup confectioners' sugar
3/4 cup cold butter, cubed
4 eggs
2 cups sugar
1/2 cup lime juice
1/2 tsp grated lime peel
1/2 tsp baking powder
Additional confectioners' sugar

In a large bowl, combine 2 cups flour and confectioners' sugar; cut in butter until mixture resembles coarse crumbs. Pat into a greased 13x9x2 inch baking pan. Bake at 350* for 20 minutes or until lightly browned.

In a large bowl, whisk the eggs, sugar, lime juice and peel until frothy. Combine the baking powder with remaining flour; whisk in egg mixture. Pour over crust.

Bake for 20-25 minutes or until light golden brown. Cool on wire rack. Dust with confectioners' sugar. Cut into squares and eat!!

Autumn

I love Autumn - all the warm colors and the yummy scents that come along with it! And with our evenings expected to drop in the 40's this weekend, it is beginning to actually feel like fall!! As of late, I've been testing out some new recipes in the kitchen.

All of the above turned out great! Tonight I decided to try my hands at Apple Pancakes served with fresh apple juice. Sounds good, huh? Well, the pancakes didn't turn out. They kept sticking to the skillet (no matter how much oil I added) and they wouldn't cook all the way through. :( It was rather disappointing. So instead we had Colby Cheese Omlets served with fresh apple juice.

Tony was able to take off work last Thursday and Friday. Some of Tony's family had rented a beach house for the entire week, so we decided to join them. It was a very fun, relaxing time.

The Glory of God

Early Saturday morning we headed to Surf City. It was still pitch black dark upon our 4:30am arrival. I cuddled up in the chair with my sleeping bag and went to sleep, while my sweet husband did some fishing. A little while later I feel Tony tapping me on the sholder, whispering "Shayna, look at the sky..."
